I've been making these for a while now as my 2 boys love them. When friends come round I will offer this as a snack and I'm constantly asked where I buy them from, I love being able to say they are homemade and telling them to follow you on Instagram! I have tweaked the method a little though as I found they never stuck together for cutting. I add the syrup mixture to the oats and rice and press it in the tin whilst it's all still hot. Once cooled, i melt the chocolate chips and drizzle that on top then into the fridge for that to set before cutting.

Too crumbly. Delicious as granola on top of Greek yogurt 😋

I've made these twice and I was probably more successful the first time. This time they've completely fallen apart. I would say maybe 50% of them stayed together and the rest are just crumbs. What am I doing wrong? I can't really send my family off with this as it is basically cereal. They taste very good but useless as a granola bar.

What I have found with these is if slightly different brands of ingredients are used they do sometimes end up crumbly. I would try adding a tablespoon more butter and a tablespoon more coconut oil and that should help hold things together better.

What do you think about adding protein powder? Worth the extra protein or would it change the flavor?

This specific recipe probably wouldn’t be great with protein powder but we have several other granola bar recipes that have peanut butter in them and they might work better that way. We also have quite a few recipes under no-bake protein snacks that use protein powder that I think you’d love! Let me know if you need help finding them!
