My family really enjoyed these. I'm going to make them with gluten free pretzels next time so I can have them. I substituted milk chocolate with white chocolate as my husband can't eat regular chocolate. Success!

Whats an alternative to coconut oil as my child hates it

in the cookie dough part you could use milk instead or you could try melted butter. anything with coconut oil in the melted chocolate you can honestly just skip it because it's just there to make the chocolate a little thinner and easier to dip or pour but it isn't needed.

I found the instructions lacking - do you refrigerate them so the chocolate sets? It seems it will take a long time for it to become firm. It also doesn’t recommend how to store them

I popped them in the freezer in a single layer and they were set in about half an hour, then I stored them in a Tupperware in the fridge and they held up great!

Super easy! We added these to our usual snack prep and they were great! I would definitely make sure you use MINI chips (I was out and thought regular would be fine- it was a struggle to get the pretzels to sit right). I would also let the coconut oil rest a little after heating it- the chips were getting gooey as I was putting it all together.
