Fluffy Chocolate Veggie Muffins

I was shocked at how good these were even though they are packed with veggies! A huge win!

Delicious, needed a few more minutes to bake. Kids could taste banana but otherwise said they were like brownies. Made 4 dozen mini muffins.

Mine came out super wet and needed like double the time in the oven. What did I do wrong

If you ended up with a super moist zucchini that could impact the wetness a bit. Next time you could pat your veggies dry with some paper towels. And if you put them in smaller muffin trays like baby muffins they take less time or if they’re in bigger muffin pans they’d take a little more time.

For the veggies…are they cooked first? Then, chopped fine?
