I’m wondering if I could put them in the dehydrator once out of the mold… :)

You could give it a try but I'm not 100% sure what would happen. You could also just spread the mixture on a tray and dehydrate and make roll ups! or fruit leather sheets

Yes i did the fruit leather already but loved the idea of having a proper sweets shape :) I’ll try it some day and will post it

Yes I think if you thawed them and strained any excess water first before you mix everything together you should be fine. Let us know if you give it a try!
